Catching Up

It's been a while since I've posted. Sorry. Once in a while I get in blogger funk and don't feel like posting anything. Sometimes it's because I have nothing to say and sometimes it's because I'm just being lazy. And sometimes it's because I feel like posting is like a school assignment that is due at a certain time and I'm finished with school and don't want to feel like I'm under a deadline. So, with that out of the way, here is a rundown on the recent days of our lives...

We all know that the Bears lost the Super Bowl. I was disappointed as I know all Chicago fans were. But, we are over it and looking forward to a stellar baseball season. GO SOX!

The past week has been filled with runny noses, fevers, coughs, and lots of tissues. Elise woke up from her nap on Super Bowl Sunday with a fever and held on to one for almost a week. That was accompanied by a bad cold and cough which of course made its way to Jeremy and me. We are all working on recovering and hope to be back to normal soon.

The other week I got to take some cooking classes at the Viking Cooking School. I took a 3-Day Culinary Basics class. Each day we started at 10:00 and cooked our little hearts out until about 2:30. Then we were able to sit down and enjoy the fruits of our labor. It was so much fun! There was only 6 of us in the class so we got a lot of individual attention from the instructor. Each day we made several recipes that resulted in a full meal. And the food was delicious! Of course, now I think that I need a Viking range in order to truly recreate my experience and put my knowledge to use...a girl can dream, can't she?! Anyways, below I listed the menus that we made each day to make your mouth water. I learned a lot and hope to take some more classes. In fact, a friend and I are already enrolled for the "Girls Night Out at the Tapas Bar" class this coming weekend. I am extending an open invitation to anyone who wants to come visit and take a class with me! Bon Appetit!

Fresh Fruit Shortcake with Crème Chantilly
** DAY 2 MENU
Sautéed Chicken Breast with Tomato Basil Sauce
Chicken Stock
Brown Stock
Rice Pilaf
Broccoli with Garlic Sauce
Lemon Curd Tarts
** DAY 3 MENU
French Onion Soup
Pan-Seared Strip Steaks with Blue Cheese Butter
Duchess Potatoes
Focaccia
Red Wine Poached Pears with Crème Fraîche.

So you'll be cooking all those things for us Spring Break? YUM! I so want to take cooking classes too. Is there one we could do when we visit?

Glad to get an update! Now we just need some recent photos... ;)

Hopefully that cold is gone for good, and I love the cooking class idea. Sounds like fun! I guess Jer can expect some pretty yummy dinners now that is wife is practically a chef!

Sounds like fun! I bet it was real tasty too! I would like to take some classes as well, but all my husband eats is meat and potatoes - much diviation from that is not a good night! Glad to see you are back at blogging - missed your posts! Go CUBS!!!
